1. Ingredients:
- Main ingredient: 5 kg of fresh donkey meat
- Additional ingredients: 500g onion, 250g fresh ginger, 200g garlic, 15g cloves, 25g cinnamon, 15g black pepper, 10 sweet pepper leaves, 15g white pepper, 100g salt, 25g monosodium glutamate (MSG), 150g soy sauce, and 100g soybean oil
2. Preparation Method:
Raw Material Processing: Select high-quality fresh donkey meat, remove the connective tissue, cut it into four pieces, and make small incisions on the meat to allow better absorption of flavors. Place the meat in a large bowl.
Marination: Finely chop the onion and fresh ginger, and cut the garlic into small pieces. Spread them over the donkey meat. Sprinkle salt, MSG, pepper, soy sauce, Sichuan pepper, cloves, cinnamon, and sweet pepper leaves along the cuts of the meat. Mix all the ingredients thoroughly with the donkey meat and let it marinate for at least 6 hours.
Roasting: Preheat the oven and clean the roasting pan. Apply a layer of soybean oil to the pan, then place the marinated donkey meat inside. Bake for approximately 3 hours until the meat is fully cooked. Remove any excess spices from the surface during the process.
