Storing eggs properly is essential to maintain their quality and extend their shelf life, especially when dealing with large quantities for market demand. Two common methods used are refrigeration and lime water storage, while the grain method is suitable for smaller batches.

(1) Refrigeration Method: Fresh eggs that have been carefully selected and cleaned should be pre-cooled before being placed in a cold storage environment. Initially, they are kept at 2–3°C for about two days to gradually adjust to the lower temperature. After this period, they are transferred to a storage area maintained at 0°C with a relative humidity of 80–85%. The storage room should be clean, dry, well-ventilated, and free from any strong odors. This method allows eggs to be stored for up to 5–6 months, making it ideal for long-term preservation.

(2) Lime Water Storage Method: This traditional technique involves mixing 1 kg of quicklime with 50 liters of water. Once fully stirred, the clear liquid on top is carefully poured out, and fresh quail eggs are submerged in it. The eggs can remain viable for 3–4 months using this method. The principle behind this approach is that lime water reacts with carbon dioxide in the air, forming a thin layer of calcium carbonate on the eggshell, which acts as a barrier against air and microbial contamination. Additionally, the alkaline nature of the solution helps disinfect the eggs. As the eggs respire, they release carbon dioxide, which further reacts with the lime water, reinforcing the protective layer. For best results, the storage area should be kept between 5–8°C.

(3) Grain Storage Method: This is an effective option for small-scale storage. The method involves placing eggs among grains such as rice or beans. The grains help insulate the eggs and reduce the oxygen levels around them through their respiration, creating a low-oxygen environment that slows down the aging process of the eggs. This technique is simple, cost-effective, and widely used in households or small farms.

In summary, choosing the right storage method depends on the quantity of eggs, available resources, and desired storage duration. Whether using refrigeration, lime water, or grain storage, proper handling and environmental control are key to maintaining egg freshness and quality over time.
