Vacuum drying is to lower the boiling point of the moisture at a state lower than normal pressure, remove the moisture in the material, and achieve the purpose of drying at a low temperature. Vacuum drying has many advantages:

1. Vacuum drying can be sterilized. Some bacteria are floating in the air, and the dried material itself carries some bacteria. When vacuum drying, most of the bacteria in the air are pumped away with the air, and some of the remaining bacteria die or lack vitality due to lack of oxygen. This is very beneficial for the drying of food.

2, vacuum drying can achieve low temperature drying. Water is proportional to temperature and pressure during vaporization. Therefore, low temperature drying can be achieved at low pressure. This is advantageous for the drying of food and agricultural by-products.

3. Vacuum drying can eliminate the surface hardening phenomenon of products which are easy to produce under normal pressure and dry conditions. At normal pressure hot air drying, a fluid boundary layer is formed on the surface of the material to be dried, and the vaporized water vapor is diffused into the air through the fluid boundary layer, and part of the moisture in the dry material is to be surface-moved. If the moving rate cannot keep up with the evaporation rate of the boundary surface, the water film in the boundary layer will be broken, and local dry cracking will occur on the surface of the dried object, and then spread to the entire outer surface to form surface hardening. The pressure difference between the inside and the surface of the vacuum drying material is large, and under the action of the pressure gradient, the moisture quickly moves to the surface without surface hardening.

4. Vacuum drying can overcome the loss of volatiles generated by hot air drying. Hot air drying causes the moisture in the object to be dried to move together with volatiles. Especially volatile components, because unstable substances will be emitted from the dried matter, especially food, which will lose the aroma and affect its taste. When the vacuum is dried, the temperature gradient inside and outside the material is small, and the moisture component as a solvent is moved by the reverse osmosis, and the solute is lost.
