1. Processing method

(2) Process flow

1 White granulated sugar, dry mixing of stabilizers → hot water dissolution;

2. Process points

(1) Dissolving and Mixing First dissolve red bean powder in hot water at 45°C~50°C; dry and mix the stabilizer and sugar, and dissolve in hot water at 80°C~90°C; Cool to below 30°C.

(2) Before acidification, the acid solution shall be diluted to a 10% or 20% solution. The temperature of the material solution shall be reduced to 35°C or less. The acid addition process shall adhere to the principle of slow acceleration of stirring.

(3) Homogeneous homogenization further refines the material to make the material evenly distributed and the product is delicate and smooth, while also improving the stability of the product. When the material is heated to about 65 °C, the homogenization pressure is 30 MPa.

(4) Sterilization As the pH value of the formulated acidic beverage is generally between 3.8 and 4.2, the target bacteria for killing are molds and yeasts, so the pasteurization can achieve commercial aseptic effects.
